You can find different types of automatic and manual pasta machines, such as: presses, sheeters, cutters or machines for making ravioli, tortellini, typical regional pastas, gnocchi, etc. Most of the models are available with a knife for short pasta, a fan for initial drying of the pasta and a water cooling system for continuous production. The machines equipped with water cooling allow the die and the extrusion cylinder to be kept at the ideal temperature of around 40° so as not to ruin the organoleptic properties of the pasta.
