Description
Concerto Ciaopasta 5 is a professional countertop machine for producing fresh pasta, ideal for medium-sized restaurants and farmhouses. This pasta machine automatically extrudes dough prepared with any type of flour, with or without eggs, gluten free, special flours, etc. in different formats depending on the chosen die.
The electronic cutter with speed variator for short pasta (sold separately) allows you to speed up and facilitate the cutting of most types of short pasta such as macaroni, fusilli, caserecce etc.
The kneading vat, in anodized aluminium, has a removable hopper to allow you to easily pour the ingredients into it and can contain up to 4kg of dough (flour + liquids).
Concerto Ciaopasta 5 is available in two versions: standard or with removable vat and support. On the standard version it is possible to install a water cooling system that ensures a constant extrusion temperature during long periods of use. This cooling system is generally disposable, but a kit for water recirculation is also available.
It is also possible to combine the Concerto Ciaopasta 5 with the RFV Automatic Ravioli Machine which allows you to produce single-sheet ravioli with a fixed or interchangeable mould.
The machine is equipped with a ventilated motor with oil bath gear reduction and a timed forced ventilation system that comes into operation even when the engine is off.
The machine is designed to allow quick and easy cleaning as all the parts in contact with the dough are made of stainless steel, including the ring nut, auger, lid, kneading shaft and hoppers.

Warning: if you don't have the cooling kit with water recirculation, due to the high temperature that develops in the extrusion cylinder and in the die, it is recommended not to exceed two consecutive production cycles (a cycle consists of the mixing phase and the pasta extrusion phase).
Concerto Ciaopasta 5 doesn't include any die.
Please note that the electronic pasta cutter for short pasta cannot be used on some dies: special shapes that require a clean cut with the scraper or shapes that have a central extrusion insert.
