This TOP 4D static pasteurizer oven, kept in the showroom for display, has a couple of very light marks on the top. The TOP 4D is a convection/direct steam combination oven that allows pasta to be pasteurized by generating steam inside the cooking chamber. This static pasteurizer oven is equipped with digital controls and can hold four GN 1/1 60x40 cm trays. By heating the combination oven to a specific temperature in steam mode and with the fan at maximum speed, freshly made pasta can be pasteurized. Once pasteurization is complete, the oven will use fan power to superficially dry the pasta. The structure is made of stainless steel and the door is double-glazed. The oven is equipped with settings for adjusting fan speed and steam exhaust, and managing up to four cooking cycles in automatic sequence. Basic guidelines for proper pasteurization will be provided by us along with the user manual.
