Description
Professional rounder with teflon-coated screw for pastry shops, designed to form smooth, spherical dough balls. It features a reinforced cylinder with twelve grooves and a teflon-coated screw specifically designed for pastry shops or for processing very moist and fatty doughs (with a hydration level between 58% and 85%).
The rounder is designed to produce dough balls weighing 20 g to 1 kg (for an average of approximately 1800 pieces per hour), smoothing them and placing them on the dedicated stainless steel tray in just a few seconds. This replaces repetitive manual work without stressing the dough and stabilizing the surface tension of the gluten.
This rounder model prevents the accidental spillage of flour inside the cylinder thanks to a special protection ring. The portioned dough slides along the teflon-coated auger and is deposited in the tray. The operator simply removes it and places it in the proofing trays. The dough rounder keeps the dough at a constant room temperature (both in the cylinder and the spiral) thanks to the innovative vacuum cooling system in the motor compartment, which maintains a constant temperature and prevents the transmission components from overheating. The rounder is made of stainless steel and is operated via a start/stop button with a safety release coil. It is equipped with movable wheels (two of which have brakes) for easy movement. Complies with both European and American health regulations (ETL, NSF Sanitation).
Caution: Do not insert dry dough pieces or dough with a dry outer surface, as this could compromise the structural integrity and proper operation of the rounder.
