Description
Professional teflon-coated screw rounder for bakeries, pastry shops and pizzerias working with delicate and highly hydrated doughs. It is suitable for forming smooth, perfectly spherical dough balls using a teflon-coated auger and a reinforced cylinder with twelve grooves specifically designed for processing dough for bread, focaccia, and pizza that is crumbly and highly digestible (with a hydration level between 58% and 85%), even with wheat germ.
This rounder model is designed for producing dough balls weighing between 20 g and 1 kg (for an approximate average of 1800 pieces per hour). It smooths the dough in just a few seconds, replacing the baker's repetitive manual work, without heating the dough and stabilizing the surface tension of the gluten.
The dough rounder is equipped with a protective ring around the cylinder where the dough is inserted to prevent flour from accidentally falling into the teflon-coated auger, which pushes the dough along the spiral, rounding the dough. The kneaded dough is then deposited into the tray; the operator simply needs to move it to the proofing trays. This model features an innovative vacuum cooling system in the motor compartment that keeps the dough portions at room temperature (both in the spiral and in the cylinder), preserving the integrity of the transmission components over time. The rounder is made of stainless steel and is operated via a start/stop button with a safety release coil. It is equipped with movable wheels (two of which have brakes) for easy movement. It complies with both European and American health regulations (NSF, ETL Sanitation).
Caution: Do not insert dry dough pieces or dough with a dry outer surface, as this could compromise the structural integrity and proper functioning of the rounder.
