Monferrina Dolly is a small, compact and reliable countertop machine, suitable for both restaurants and those who love good homemade pasta. It kneads any type of flour and produces long and short dough with the simple change of the die. The machine has an external structure in anodized aluminum and parts in contact with the pasta in stainless steel, safety button, power indicator and complies with current accident prevention regulations.
The machine includes 4 standard brass-bronze dies while the penne die and PTFE dies have to be bought apart. It can be supplied on request with a rotating cutting knife for short pasta shapes. It is also possible to combine Dolly with the manual double sheet ravioli maker in the 34x40 mm format to produce ravioli with different types of fillings.
Attention: it is recommended not to go beyond two consecutive production cycles (a cycle consists of the mixing phase and the pasta extrusion phase). At the end of the two cycles, the machine must be switched off, carefully cleaned of any residual dough and left to cool for at least an hour.
Lineapasta provides, together with the machines and only to its customers, a user guide together with a pasta recipe book in paper format, to be used with our professional machines, created by our pasta technician.

I was initially a bit hesitant to order this extruder from another country, but in the end my concerns were unfounded. Nicola was a pleasure to do business with and my machine arrived safe and sound within a few weeks. I will absolutely do business with Lineapasta in the future.

So glad I found Lineapasta! Less than half the price compared to buying the same machine within Canada, even after accounting for shipping from Italy and taxes. I purchased the La Fattorina for my wife as an anniversary gift, it's the perfect size for serving 4 to 8 people at home. The quality of the La Fattorina is very high, it is clearly commercial-grade quality in a small (but heavy!) package for home use. Lineapasta replied to my email inquiry very quickly, and the shipment arrived to me in Canada from Italy in 3 business days. The machine was very well packaged to prevent damage. Very satisfied customer from Canada, and we look forward to purchasing a bunch of new dies to try out different pasta shapes!
